THE STORY

After 2 years of learning from the great pizzaiolo, John Nowaki, I decided to take on the challenge of running a pizza place myself. In the summer of 2024, I found that there was a growing need for a trendy, streetfood style pizza parlour in my home, the village of Inkberrow. With the help of the locals, friends, family and my partner Grace I was able to re-open the Pizza Shack at The Bulls Head Inn!

From learning the art of crafting traditional Neapolitan pizza with John and my love for cooking East-Asian Cuisine, I created the brand Neapori wood-fired pizza. It is my dream to travel Japan learning new techniques and gather inspiration for new dishes to bring home and present at Neapori. With the influence of Italian traditions, a combination that is rarely seen, we hope to deliver new and exciting cooking methods for you to enjoy. In Japan this is known as Yoshoku, A form of fusion cuisine that sees Western-style dishes made with Japanese flavours and Ingredients.

THE PROCESS

At Neapori we are always striving to be better, it sounds cliche but we are genuinly always on the look out for new ways to deliver a better quality product, become more sustainable or improve our efficiency.

 

We source our Italian produce fresh from Italy through a well respected supplier in the industry. Our pizza dough is made on site and is proved for over 24 hours in order to attain that fermented flavour and fluffy texture that is known throughout Napoli as La ricetta della pizza napoletana. Hand-stretched and topped with the finest Fior Di Latte Mozzarella, San Marzano Tomatoes and freshly picked Basil, the Margherita pizza is a staple in every pizza restraunt in the world. It often sets the standard for all other pizza's on the menu. We Beleive this will always be our best pizza and it will continue to get better as we grow older.

Where we do not gather our ingredients from Italy we always try to source locally from sustainable suppliers that follow our high quality standards.

THE END GOAL

​

The sky is the limit with Neapori. We intend to explore all aspects of food and drink from pizzas and side dishes, ramens and rice bowls to coffee and cakes, cocktails and beers. Its really our love for different cultures and traditions that makes us want to seek new ways to improve our flavours and textures while maintaining the classic methods of presenting food and drink.

My partner Grace has all of the experience when it comes to crafting specialty drinks such as her famous Thai-coconut Margerita cocktail or the must-try Spiced Vietnamese style coffee. Grace has had the highest level of training from her time at The Botanist cocktail bar where she was head barista.
